Ingredients
4 eggs
1 banana
1 tblspn coconut flour
1 tblspn cacao powder
1 tsp cinnamon powder
1 tblspn chia seeds
1-2 tsp coconut oil
1 cup frozen berries
Method
1. Add the eggs, banana, flour, cinnamon and cacao to a blender and turn on low to combine into a smooth batter.
2. Heat the oil in a pan to medium high heat
4. Add the batter to the pan, creating pancakes that are roughly 8-10cm diameter (3 inches)
5. Sprinkle chia seeds over the uncooked side and leave to cook for about 2-3 mins
6. Carefully flip the pancakes and cook for a further minute or so.
7. Repeat until the batter is all used up - makes about 8-10 pancakes in our house
8. Serve with berries of your choice. I like them frozen and roll the berries up in the pancake to devour. Nezz likes his berries defrosted and eats his pancakes in a very civilised manner with a knife and fork.
