
Ingredients
500g organic chicken thigh (4 thighs)
1/4 cup coconut flour
2tsp sumac powder (great citrus flavour)
1/2tsp sea salt
1/2tsp pepper
3 eggs, beaten (I used 4 but only needed 3)
1-2 cups shredded coconut
Method
1. Preheat oven to 200deg C
2. Chop the chicken into nugget sized chunks
3. Mix the flour, sumac, salt & pepper
4. Coat chicken in flour, then eggs, then coconut.
5. Spread out on a baking tray and cook for 20-25 minutes until golden. Turn them once during cooking to get a golden coat all over.
