
Ingredients
for the base
1&1/2 cups of raw almonds (ground into meal)
1/2 cup of raw macadamias (chopped)
1 tsp of cinnamon
little bit of water
for the middle bit
2 -3 cups of berries (frozen)
2 tblspns chia seeds
1 tblspn of honey (can be omitted)
for the topping
1 can coconut cream (the 440ml size)
1/2 cup raw cashews (more, like 1 cup, would have been better for serving room temp rather than frozen)
1 tblspn lemon juice
1 tsp cinnamon
Method
- Mix all the base ingredients together, I needed about 2 tablespoons of water, but you are after a crumbly dough like texture.
- Press the dough into the base of a flan with a removable bottom - no need to go up the sides - then store in the freezer whilst you make the rest
- Mix all the ingredients for the middle together - I used a potato masher to break down the frozen berries easier. As the berries melt slightly the juice mixes with the seeds to form a gel like consistency. Set aside
- In a high speed blender, mix the topping ingredients together until smooth
- Take the base from the freezer and add the berry mix to it and using a spatula or spoon smooth it down
- Pour the cream mixture on top (you might have some leftover, yumm!!) and put it back into the freezer for at least an hour
To serve, I took it out and let it thaw for 5-10 minutes then removed the sides to cut it up.
If I made it again, I would perhaps use less cream and more cashews in the topping, then it could perhaps be served a little less frozen. I think the flavours would come out more then. But either way, it is really good!
