Chocolate Chip Banana Pancake (Paleo, Gluten Free)

Chocolate Chip Banana Pancake (Paleo, Gluten Free)



Ingredients

2 small bananas, about 1 cup
2 eggs
5 tablespoons full fat coconut milk
1¼ cup almond flour
¼ teaspoon baking soda
1 tablespoon coconut palm sugar
⅓ cup ground almonds
pinch of salt
1 tablespoon (or more) chocolate chips
butter for frying


Instructions

- in a medium bowl smash the bananas and mix with the 2 eggs and coconut milk
- in a separate bowl, mix together the almond flour, baking soda, salt, coconut sugar, ground almonds and chocolate chips
- combine the dry ingredients with the wet
- heat the butter in the pan and cook the batter on both sides

Recipe makes about eight 4-inch pancakes
