Blueberry Muffins

Blueberry Muffins



Ingredients

1 cup(s) organic blueberries, fresh or frozen
1/2 tsp(s) Celtic sea salt
6 large organic eggs
1/2 tsp(s) non-aluminum baking soda
1 Tbsp(s) organic vanilla extract
3 Tbsp Madhava Agave Nectar
4 Tbsp(s) organic virgin coconut oil
1/2 cup(s) coconut flour, sifted

Preparation

Preheat oven to 350 degrees F.
In a small bowl, combine coconut flour, salt and baking soda.
In a large bowl, combine eggs, agave, oil and vanilla and blend well with a hand mixer.
Mix dry ingredients into wet, blending with a hand mixer.
Gently fold in blueberries.
Place unbleached cupcake liners in cupcake pan.
Pour batter into liners.
Bake for 20-25 minutes
Cool and serve.
