Carrot Cake

Carrot Cake



Ingredients

3 cup(s) ground organic almond flour
1 1/2 tsp(s) Celtic sea salt
1 tsp(s) baking soda
1 Tbsp(s) organic cinnamon
5 large organic eggs
6 medium organic carrots, grated
1 cup(s) organic raisins
4 Tbsp(s) organic virgin coconut oil
1 cup(s) organic walnuts, roughly chopped
2 tsp(s) organic nutmeg
8 Tbsp Madhava Agave Nectar


Preparation

Preheat oven to 325 degrees F.
In a large bowl, combine almond flour, salt, baking soda and spices.
In a separate bowl, whisk together eggs, agave and oil.
Stir carrots, raisins and walnuts into wet ingredients.
Mix wet ingredients into dry ingredients.
Pour batter into two greased, round 9 inch cake pans.
Bake for 35 minutes.
Cool, and frost if desired with Cream Cheese Frosting, Coconut Cream Frosting or Cashew Cream Frosting.
Serve.
