
Ingredients
2 large or 4 medium sweet potatoes (this serves 4)
2-3 cups shredded chicken – we used a pre-cooked rotisserie chicken
2 avocados, cubed
Green onions to garnish
Instructions
- So easy…
- Clean potatoes
- Bake potatoes whole on a foil-lined cookie sheet for 35-60 min depending on the size. Medium sized potatoes should be done in about 40 min. Test with a fork. If it slides through easily, they’re done.
- Slice potatoes and remove about 1/2 of the insides
- Add salt and pepper to the potatoes
- Mix your shredded chicken with a generous amount of our Paleo BBQ Sauce. I usually add an extra spoonful of sauce at the bottom of the potato
- Stuff the potato with BBQ chicken
- Garnish with avocado cubes and green onions
- Make extras…this is the perfect left over lunch or dinner! Enjoy you Paleo rock stars!
