Sauteed Baby Squash

Sauteed Baby Squash



Ingredients

2 pints baby squash (flowers optional)
1 pint baby shiitake mushrooms
2 tablespoons coconut oil
2 cloves garlic, smashed
2 tablespoons freshly chopped basil
Freshly ground pepper, to taste



Instructions

Thoroughly wash squash and mushrooms
Heat oil in cast iron skillet over medium
Add garlic and saute 1 – 2 minutes or until nicely browned
Add squash and mushrooms and saute 5 – 7 minutes longer
Add basil
Turn off heat
Cover pan and let sit a few minutes
Grind pepper on top, to taste
Serve with your favorite protein to make a balanced Paleo meal
