
Ingredients
Scallops:
1 tablespoon grass-fed butter or virgin coconut oil
12 Bay scallops (the big ones)
1 lemon
Salt & pepper
Red Pepper Sauce:
1 large roasted red pepper (or jarred roasted red peppers)
1 garlic clove
Juice from 1/2 lemon
2 tablespoons olive oil (or macadamia nut oil)
Salt & pepper
How-to:
Squeeze lemon juice generously over the scallops
Salt and pepper both sides
Let the scallops sit while preparing the sauce
Place all sauce ingredients in a food processor and puree until smooth
Heat the sauce in a saucepan over medium heat
Heat a grill pan and brush with butter or coconut oil
When grill is nice and hot, add scallops, six at a time
Grill 3-4 minutes on each side
Arrange scallops on a plate with sauce and extra lemon pieces
Enjoy with a big, green salad.
