
Ingredients
4 cups mixed green lettuce
2 leftover, cooked chicken breasts, 10 – 12 oz in total, cut into strips
1 cup raw blueberries
1 oz raw walnuts
1 yellow bell peppers
1/2 cup watermelon, cubed
2 tablespoons extra virgin olive oil
Instructions
Divide lettuce into two portions and place on two plates
Add half the sliced chicken to each
Scatter half the berries, walnuts, pepper and melon on each
Drizzle one tablespoon oil on each
Can be made in advance and taken with you as a Paleo To Go meal.
