Gingerbread Cookies

Gingerbread Cookies



Ingredients

8 Tbsp Madhava Agave Nectar
1 Tbsp(s) organic cinnamon
1/2 tsp(s) Celtic sea salt
8 Tbsp(s) organic virgin coconut oil
1 Tbsp(s) organic vanilla extract
8 Tbsp Navitas Naturals Yacon Syrup
2 large organic eggs
1 tsp(s) baking soda
1 Tbsp(s) organic ginger powder
1/2 tsp(s) ground cloves
1 tsp(s) lemon zest
5 cup(s) ground organic almond flour


Preparation

In a large bowl, combine almond flour, cinnamon, ginger powder, cloves, salt and baking soda.
In a smaller bowl, mix together oil, agave, vanilla, yacon, eggs and lemon zest.
Stir wet ingredients into dry to combine.
Place dough in freezer and chill 1 hour.
Preheat the oven to 350 degrees F.
Place dough between two pieces of unbleached parchment paper. Roll to ¼ inch thick.
Remove top sheet of parchment and cut out cookies using medium-sized cookie cutters (try gingerbread men or stars).
Transfer with a spatula to a baking sheet lined with unbleached parchment paper.
Cook for 15 minutes.
Cool and serve.
