
3/4 Cup Coconut Flour
2 Bananas (Really Ripe)
4 Organic Eggs
¼ Cup Raw Honey
2+ Tbsp Coconut Flakes
1 Tbsp Cinnamon
1 tsp Vanilla Extract
1/2 tsp Baking Powder
1/2 tsp Baking Soda
Pre-heat your oven to 350 degrees. Then peel and mash your bananas, set aside. Mix all wet ingredients separately then add them to your banana mash. Stir in your dry ingredients to the banana mixture, whisk well. Spray the muffin tin with organic cooking spray and fill each section ¾ of the way. My mixture was thicker so it was easy to just scoop it all with a spoon into the tin. Sprinkle the top of each muffin with flaked coconut and bake for 25-30 minutes. Use the “toothpick” test after 25 minutes, you want them to be moist in the middle so be careful not to overcook them.
These glorious treats are so good by themselves, however, if you are a muffin buttering fanatic, then try honey or a little almond butter. Enjoy!!
