
Ingredients
2 whole organic Cornish game hens
2 tsp(s) organic orange zest
1 Tbsp(s) organic extra virgin olive oil
6 sprig(s) fresh organic thyme
1 whole fresh organic orange, juiced
2 tsp(s) freshly ground black pepper
Preparation
Preheat oven to 350 F.
Set thyme sprigs aside to garnish each serving.
Finely chop the remaining thyme sprigs.
In a small bowl, whisk orange juice, olive oil, orange zest, shallot and chopped thyme.
Place Cornish hens, breast side down in a glass baking dish with a lid.
Pour the marinade over the hens, cover and roast 45 minutes, or until juices run clear.
Remove from oven, allow to cool slightly; cut each hen in half lengthwise and garnish with a thyme sprig.
