
Ingredients
12 Large Tomatoes
4 sweet Onions
3 cups vegetable stock or water
1 1/2 teaspoon honey
3 tablespoons fresh tarragon finely chopped
1/4 teaspoon oregano
1 clove or minced garlic
Method
Step 1
Preheat oven 350.
Step 2
Cook tomatoes for about 20 minutes until soft.
Step 3
Remove tomato skins set aside.
Step 4
Peel onions and pace and bake for 25 minutes.
Step 5
Place tomatoes, onions, vegetable stock, honey, and oregano in a saucepan. Bring to a boil.
Step 6
Reduce heat to a simmer add tarragon and simmer for 5 minutes.
Step 7
Blend the soup in a food processor or blender
Step 8
Serve and Enjoy
