
Ingredients
4 Roma tomatoes
2 Tbsp olive oil
4 chicken breast fillets
2 cloves garlic – crushed
2 cm piece ginger – peeled and finely sliced
2 small red chillies – seeded and finely sliced
1/2 cup lime juice
250g fresh asparagus – steamed
Sea salt (optional)
Pepper to taste
pinch of oregano
Cooking Method
1. Preheat Oven to 180ºC ( ºF)
2. Place tomato halves on a tray and drizzle with olive oil
3. Season tomatoes with a sprinkle of sea salt, pepper and oregano
4. Bake for 30-40 minutes
5. Heat some olive oil in a pan
6. Add chicken and cook for 10-15 minutes or until chicken is cooked through and golden brown
7. Place garlic, ginger, chillies and lime juice in a small saucepan
8. Bring to the boil then reduce heat and simmer for 8-10 minutes, until liquid is reduced by half
9. Serve chicken, asparagus and roasted tomato evenly and drizzle with the chili dressing
