Pumpkin Pecan Pancakes

Pumpkin Pecan Pancakes



Ingredients

1 and ¼ cup coconut flour
2 teaspoons baking powder
½ teaspoon cinnamon
½ teaspoon salt
⅛ teaspoon pumpkin pie spice
1 cup coconut milk
6 tablespoons pumpkin puree
2 tablespoons melted butter
1 teaspoon maple extract
1 teaspoon vanilla extract
1 egg


Directions:
Whisk together the coconut flour, baking powder, cinnamon, salt, and pumpkin pie spice.
In a separate bowl, mix together the coconut milk, pumpkin puree, melted butter, maple extract, vanilla extract, and egg.
Fold the pumpkin mixture into the dry ingredients.
Melt a lot of butter on a griddle over medium heat.
Allow the griddle to heat for at least 2 minutes.
Pour the batter into little circles (or big circles, you pick!) and cook for around 4 minutes on each side.
