Porky Rolled Chicken

Porky Rolled Chicken



Ingredients

chicken breasts (flattened out with a tenderizer)
thin ham slices (1-2 per piece of chicken)
bacon pieces
pepperoni, any size (I used the minis because that’s what I had, but any will do!)
salt, to taste
pepper, to taste
garlic powder, to taste
onion powder, to taste
lemon juice (sprinkled for taste)
dill, to taste
bacon grease, if you have it



Process:

Preheat oven to 350 degrees.

If you haven’t already, flatten out your chicken breasts with a meat tenderizer hammer thingy. I found that it was better to hit the side with the smooth side. The rib side started to fall apart some when I was flattening it.

Lay the chicken out flat. Smear bacon grease all over the top of the chicken breast.

Sprinkle it with all of the dry ingredients above and squirt a little (not much at all!) lemon juice on the chicken. Then flip the chicken and lightly sprinkle all of the dry ingredients on that side. Flip it back over to place the pork ingredients in.

Lay the ham on top of the chicken. Place pepperoni and sprinkle bacon onto the chicken. Mine looked like this.

Then carefully roll the chicken.

Place in the oven and bake for 35 minutes or until done!

I served ours with mashed sweet potatoes (coconut milk, cinnamon, pecans) and paleo slaw!
