
Ingredients
2 Tablespoons Olive Oil
2 Large Zucchinis
1 cup Cut Mushrooms
Black Pepper & Salt to taste
Pesto:
1/4 cup Olive Oil
1/4 cup Fresh Basil
1 Clove Garlic
Salt to taste
Start by heating 2 Tablespoons of Olive Oil over Medium Heat
Make your pesto by combining the basil, garlic, and olive oil (Or use any pesto recipe you like)
Lightly peel the zucchini.
You just want to get rid of the bright green skin.
Continue to use the peeler to create your noodles.
Stop when you get to the seedy center.
Toss the noodles in the olive oil over medium heat until the are hot and tender. (About 2 minutes)
Add in cut mushrooms and salt and pepper to taste
Toss with your pesto and remove from heat
There you have it Italian...Paleo Style!
