
Ingredients
1/2 Cup Coconut Flour
1/4 teaspoon Baking Soda
1/2 teaspoon Sea Salt
5 Large Eggs
1/2 Cup Melted Coconut Oil (cool slightly before adding eggs)
1/3 Cup Honey
2 teaspoons Vanilla Extract
2 teaspoons Vinegar
1/2 Cup Blueberries
1 Cup Chopped Walnuts
Directions:
Preheat oven to 350 degrees
Line muffin pan with liner or grease with coconut oil
Mix dry ingredients (keep berries and walnuts aside)
Mix wet ingredients
Combine wet and dry ingredients
Fold in berries and walnuts
For standard sized muffins add approx. 1/4 cup batter to each muffin (nearly full)
Bake for 22 minutes at 350 degrees
