
Ingredients
Wet:
4 eggs
1/2 tin (200mL) coconut milk
4 tbsp coconut oil, melted
1 mashed banana
1 green apple, peeled and grated
Dry:
1/2 cup coconut flour
1/2 tsp cinnamon
1/2 tsp baking soda
pinch salt
1/2 cup raisins
Method
Preheat the oven to 180 degrees Celsius.
Whisk all the wet ingredients together until well mixed. Sift all dry ingredients into a bowl and mix well. Fold the wet into the dry mixtures.
Spoon into a muffin tray greased with coconut oil and bake for 18 mins or until golden brown on top, and a knife poked into a muffin comes out clean.
Enjoy with your afternoon cuppa!
N.B. The sifting of the coconut flour is very important. My mother attempted this recipe without sifting and the “Fluffy” muffins didn’t live up to their name!!
