Banana Walnut Muffins

Banana Walnut Muffins



Ingredients

1/2 tsp(s) baking soda
1/2 cup(s) organic walnuts
4 Tbsp(s) organic virgin coconut oil
1/4 tsp(s) Celtic sea salt
2 medium organic bananas
3 whole, pitted organic dates
3 large organic eggs
1/4 cup(s) organic coconut flour
10 drop SweetLeaf Stevia Clear


Preparation

Preheat oven to 350 degrees F.
Place an unbleached parchment paper liner on baking sheet. Add walnuts and toast 4-5 minutes. Cool and chop.
In a Vita-Mix or other high speed blender, combine eggs, oil, bananas, dates and stevia. Blend on medium speed until combined.
In a medium bowl, whisk coconut flour, salt and baking soda. Pour in egg-banana mixture and whisk until smooth.
Fold in walnuts
Scoop one-quarter cup of batter into each lined cup.
Bake for 20 to 25 minutes.
Cool and serve.
